Have you had the Glazed Almonds with Cranberries from Starbucks? If you haven’t, and you have an extra $2 next time you’re there, grab a bag and try them. They’re delicious!
This recipe is my remake of their honey-butter glaze, and although it’s not exactly the same, it’s awfully close.
1 lb raw almonds
2 tablespoons butter, melted
2 tablespoons brown sugar
1 tablespoon honey
1 teaspoon salt
½ teaspoon vanilla extract
½ teaspoon almond extract
Preheat oven to 350. Mix brown sugar, honey, salt, vanilla extract, and almond extract into the melted butter. Add almonds and stir to coat.
Spread onto cookie sheet in a single layer. Bake for 8-11 minutes. The longer you bake them, the crunchier they’ll be, but the more prone to burning they’ll be.
Remove from oven; let cool. As they cool, they’ll crisp up, so don’t expect to have a super-crunchy almond while they’re still warm.
Mix with your choice of add-ins: cranberries, chocolate chips, M ‘n’ Ms, other nuts, or whatever you can think of.
Although raw almonds aren’t the cheapest food out there, these would make a wonderful homemade gift, especially during the holidays. And they’re much cheaper than buying Starbucks’ version. :)
